Made with malted wheat, milk, khoya, desi ghee, cloves, nutmeg, and edible gum, this very dark, very fudgy halwa gets its name from the Arabic word for Abyssinians — a reference to its deep, almost black colour. 

The sprouted wheat is ground to a paste and cooked for over four hours with milk and sugar on a slow flame, which caramelises the sugar to give it its characteristic dark hue and dense, warming texture.
